Tamale Round About Recipe

A unique spin to a tamale recipe or tamale casserole recipe! This recipe comes from my sister Sharron:

  • 1 1/2 ground chuck, cooked then drained
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic salt
  • 16 oz Thick and Chunky Salsa, medium/mild
  • 1/4 cup bell peppers, red/green or yellow
  • 1 1/2 cups all purpose flour
  • 1 cup yellow cornmeal
  • 1 Tablespoon baking powder
  • 1 1/4 cups milk
  • 1/2 cup egg substitute
  • 1/4 cup canola oil
  • 1 cup cheddar cheese, shredded

Preheat oven to 375 degrees and grease bundt pan with cooking spray

In skillet add cooked meat along with chili powder, garlic salt and salsa. Heat for 5 to 7 minutes until mixture is hot

Place chopped bell pepper in bottom of greased bundt pan

In bowl combine flour, cornmeal, baking powder, salt, milk, egg substitute and oil. Mix well

Pour 1/2 of cornmeal mixture over bell peppers

Pour all of meat mixture over cornmeal

Top off the meat mixture with the other half of the cornmeal

Add cheese last to top of cornmeal

Bake for 35 to 40 minutes

Serve with a dollop of sour cream
